Best Ever- Bacon Wrapped Pork Tenderloin

I cannot explain how incredibly divine this pork tenderloin is. Best meal I have made hands down.

I made a few minor changes to the recipe below. I used no paprika, no rosemary, and used honey dijon mustard instead of the hot and sweet mustard.

If there is one recipe you make in your life, it should be this one!!

Bacon Wrapped Stuffed Mushrooms

SO FREAKING DELICIOUS!!!!

12 Mushrooms washed with atems removed
4oz Cream Cheese
1/2 cup of grated parmesean cheese
2 Green onions chopped
6 Sliced of bacon cut in half
12 toothpicks

1) Gently press together and hand mix cream cheese, parmesean cheese, and green onions.
2) Stuff each mushroom with a generous portion of mixture
3) Wrap each muchroom with half of a slice of bacon and secure it with a toothpick
4) Place on baking sheet and cook at 350 for 25 minutes or until bacon is crispy
5) Allow them to cool off and enjoy!!!

Perfect Low Calorie Breakfast

Shred a medium sized potato, add a little olive oil, and pan fry.You can also use frozen hash browns, I like the Trader Jo's brand hash browns, they are organic, preservative and additive free. Cut up a handful of baby tomatoes and top with a dollop of cilantro lime Greek yogurt. MMmmm Mmm!

Serving shown in picture is about 150 calories.

BBQ Chicken

This chicken has so much flavor it is unreal. I put salt and pepper on both sides of the chicken, stuck them on the grill for three minutes, flipped them and slathered Sweet Baby Rays BBQ sauce on them. cooked for another three minutes, flipped, slathered with sauce, cooked another 2 minutes, flipped, slathered, 2 minutes, flipped, slathered, and repeated until they were cooked through. 

For sides I made a half of a baked potato with salt and pepper only and a side salad with spring mix, banana peppers, radishes, baby carrots, and a lime and chive dressing.

Salad

I've been trying to make sure I eat at least 7 salads a week. I never feel guilty after eating a salad even if it is drenched in ranch. I am down 20 pounds since I have been incorporating salads daily and I am loving it!

This one was my favorite yet. Spring mix, avocado, red onion, baby carrots, cherry tomatoes, sunflower seeds, strawberries, and a low fat honey mustard.
 This was a quick salad I threw together and it definitely hit the spot. Spring mix, broccoli, baby carrots, red onion, almonds, roasted red pepper hummus, and a poppy seed dressing. 
I put this together at the whole foods deli on my lunch break. DELISH!! Spinach, steamed tofu, balsamic mushrooms,strawberries, almonds, and collard greens. This one was so flavorful I didn't even use dressing.

Smoked Brisket

I cannot describe how delicious smoked brisket is. I enjoyed this smoked brisket with a side of cauliflower mashed potatoes and green beans. (P.S. I cut off the fat from the brisket to avoid the extra calories)

Cauliflower mashed potatoes are super easy. Cut the cauliflower into small pieces and steam until soft. I like to add some pan seared garlic, skim milk, salt, and pepper. Put the cauliflower and seasonings into a food processor or blender and blend until you get a creamy mixture.

For this meal I used canned green beans.
